Cream cheese spread with grasskelp

5 g of soaked grasskelp
150g cream cheese natural
½ lime, the juice and the grated peel
1 small chopped chili

Mix all ingredients, allow to rest in the fridge ½ hour before serving.

Serrated wrack hummus

1 package of pre-cooked chickpeas (380g)
3 g of dried serrated wrack
1 tbsp tahini
1 grated garlic clove
½ tsp cumin
3 tablespoons olive oil
salt and pepper
lemon juice

Put all ingredients except salt, pepper and lemon in a food processor. Mix until smooth. Taste off with salt, pepper and lemon juice.

Dulce mayonnaise

2 egg yolks
2 tsp Dijon mustard
2.5 dl of cooking oil
3 g of crumbled dulce
a splash of lemon juice

Whisk egg yolks and mustard for a minute, slowly add oil while whisking.
Mix in the dulce and taste with lemon juice

250 g of sirloin diced into finely or milled.
1 tbsp Dijon mustard
1 tbsp olive oil
1 egg yolk
Handful of finely chopped estragon and chives,
To taste: salt, pepper, a pinch of sugar and
lemon juice.

Mix all ingredients, taste with salt, pepper, sugar and lemon.
Serve garnished with Seapops and dulce mayonnaise.

Bladderwrack pesto

50 g roasted sunflower seeds /pine nuts
5 g of dried bladderwrack, soaked for at least 30 minutes
25g of fresh basil
1 dl olive oil
1 small grated garlic clove
1 dl grated Parmesan cheese
2 tsp lemon juice
salt and pepper

Cut the soaked bladderwrack into smaller pieces. Mix all ingrediencies in a food processor. Store in a sealed glass jar in the fridge for at least 2 weeks. Pesto will last longer with a layer of olive oil on top. Tip: you can try tris recipe with any other brown seaweed.

Sugarkelp chips

10g of dried sugarkelp
1 tbsp cooking oil
1 tbsp roasted sesame seeds

Roast the sesame seeds in a dry pan on medium heat until they start to pop. Remove from heat. Heat the oil in a frying pan, add the dry sugarkelp. Remove from the heat as soon as the seaweed lightens in color or small bubbles form. Sprinkle with the roasted sesame seeds.

Kombu dashi

1 liter of cold water
10 g of dried kombu strips

Soak kombu in the cold water for 30 min. Slowly heat up the water and remove kombu just before it starts to boil.

Kombu stripes can be cut into the soup or used to make seaweed salad flavored with e.g. sesame oil, rice vinegar, sugar, tahini and coriander.
